Gail McPherson says there is only one way to make a great apple pie: “You’ve got to mix the apple varieties that you put in your crust,” she says. “We mix eight different kinds together. You don’t need to add any spices. The fl avors just commingle when you bake them.

“York Imperial. McIntosh. Fuji. Mutsu. Granny Smith. Rome. Stayman. And Empire. It’s the Eight Great Apple Pie, and the only place to make it is here in October when we’ve got all the varieties at our market store.”

The Scots-Irish McPherson family owns Maple Lawn Farms, New Park, York County. Designated a Century Farm in 1976, six generations can trace their farming roots to 1867 when the first McPherson’s name appeared on the land deed. Over the years, McPherson ancestors have grown wheat, corn, soybeans, potatoes and green beans. Today, the family owns more than 1,400 acres where they grow blueberries, cherries, 23 varieties of peaches, nectarines, and, of course, apples.

“Everybody’s got their favorite. People just live for the variety they love,” Gail says.

Every summer, thousands of city dwellers visit Maple Lawn’s U-Pic orchards and fields, the farm market and assorted agriculture-based mazes.

“Most of our guests remember coming to the farm as children,” Gail says. “Now, they are coming back with their kids.”
